Lemon potato omelette

Simple and fresh recipe that can be eaten in all seasons. Composed of three main ingredients: eggs, potatoes and lemon; this omelette has the simplicity and taste of a classic homemade Italian dish. Try it and you won't regret it!
Ingredients:
- 20 grams of spring onion
- 3 eggs
- 200 grams of potatoes
- lemon peel
- olive oil as required
- salt as required
- pepper as required
Preparation:

1 Cut the spring onion into thin slices, 2 then peel the potatoes and 3 cut them into chunks.

4 Break the eggs into a bowl and 5 grate the lemon zest (only the yellow part) in them, at the end beat the eggs together with the lemon zest. 6 Pour a drizzle of olive oil into the pan and brown the spring onion over medium heat.

7 When the spring onion has browned, add the potatoes, salt and stir periodically. After about 10 minutes (depending on how big the potato chunks are), when the potatoes are cooked and browned, 8 add the eggs with the lemon, 9 cover the pan and cook over low heat.

10 When the egg has also congealed on the surface, 11 turn the omelette for a minute, then 12 turn it over and grate a little pepper on top.
Advise
- If you don't have spring onion you can easily replace it with onion or shallot.
- When the omelette is sufficiently thickened, you can more easily flip it onto a lid and then place it back in the pan without risking breaking it.
